Victoria's secret

Victoria Laine, nutrition counsellor, NAIT cooking instructor and author of the radical Health by Chocolate* cookbook, provides a recipe for triple omega energy balls. (p. 21)

Triple omega energy balls

2 tbsp flax seeds
2 tbsp hulled hemp seeds
1 cup walnuts
3/4 cup dried apricots*
3/4 cup figs or raisins or cranberries*
1/4 cup cocoa powder
2 tbsp cacao nibs (optional)
1/4 cup sesame seeds (optional)
1/2 cup melted chocolate (chips, bars or drops)

Variations: Add other health building ingredients such as goji berries, spirulina, greens powder, ginseng or maca.

Method: Grind flax seeds by placing them in a spice/coffee grinder and pulse several times. Place all ingredients, except melted chocolate into a food processor with the "S" blade. Process approximately 1-2 minutes until a moist dough-like mass forms. Roll the mixture into balls and set on a plate. Roll each ball into melted chocolate to coat. Let them set on a rack either at room temperature or in the refrigerator. The balls will keep in the refrigerator for two weeks (if hidden from chocolate lovers).

*Note: You need moist dried fruit for this recipe. If the fruit is too dried out, soak in hot water for several minutes to soften and re-hydrate. Drain water before using.
